Aviation American Gin is a modern classic from Portland, Oregon, created in 2006 by bartender Ryan Magarian with House Spirits Distillery and named after the pre-Prohibition Aviation cocktail. Grain spirit is macerated with juniper, lavender, cardamom, sarsaparilla, coriander, anise seed and orange peel, then redistilled in small batches for a bright, balanced gin that is less juniper-forward than a London Dry.
